Pancakes: yummy!


As Moms we want to protect our kids from the world. Unfortunately, unless you want to wrap you kid in bubble wrap your kids will be exposed to things that are not very good for them.  You do, however have control of the food they eat (at least until they go to school).  Did you know there has been a correlation between hyperactivity and preservatives and food dyes. Preservatives and food dye can also cause a flair up of eczema. Kalisha and I have been working on eliminating all preservatives and food coloring  from our kids diets. Which means, there are no boxed foods in our pantries. The question is how do you find time to make things from scratch while juggling everything else in your life. One way is to make pre-made mixes. Here is a recipe for pancake mix.

Pancake mix: yield 30 silver dollar size cakes

Dry ingredients
1/2 c. unbleached all purpose flour
1/2 c. whole wheat flour
1 tsp. baking powder (w/o aluminum)
1/4 tsp. baking soda
1/4 tsp. salt
1 tbsp. sugar
optional: 1 tsp. cinnamon

Wet ingredients
1 egg
1 c. milk
2 tbs. apple sauce or oil
optional: pureed bananas, strawberry pieces, blueberries, chocolate chips

Combine all dry ingredients and seal in a freezer bag. Keep in freezer until you use it. Make several batches and put them in individual bags. When ready to make, make a well in dry ingredients and add all wet ingredients (combined). Mix and cook on a griddle. ENJOY!!
