One skillet in less than thirty!

So, one thing that I (Kalisha) don’t like to do is spend  more than an hour in the kitchen at a time! At the same time I still want to serve nutritious meals that my girls will eat. Reneca is on the same boat. She is very attentive to the ingredients she cooks with and also doesn’t have the time to be slaving away in the kitchen all day. We want to share a recipe that is quick, easy and perfect to please a picky eater.

I don’t really have a name for this so I will call it my one skillet wonder! lol

What you need: (for a family of four)

  • 1lb organic chicken breast cut into cubes
  • 1 can of black beans (you can use dry beans, but this is for a quick meal)
  • 2 handfuls of baby spinach; coarse chopped
  • 2 c. brown rice; cooked in chicken stock
  • 1/2 c. shredded cheese of choice
  • you can also add 1 c. frozen corn, or fresh tomatoes

What to do:

     Add oil to heated skillet and add seasoned chicken. Cook until no longer pink and then add in black beans along with about 1/2 c. of chicken stock or water. Then add rice, spinach and any other veggie you want. Let simmer until sauce thickens. Turn down heat and add cheese and cover for a couple minutes. Serve with warm tortillas, fresh warm bread or even fill up some pitas. Also, during cooking I like to sprinkle extra seasonings like a little chili powder or a sprinkly of the taco seasoning mix. (I just realized that I made a typo saying sprinkly instead of sprinkle, but I like the word sprinkly!)
