Fun drinks for a picky eater

We all have those days when our kids won’t eat anything. During those day a smoothie might be the only thing that they’ll try. Here are a few smoothie recipe to try.

Banana Smoothies or Pops

10 ounces of milk
1 (8-ounce) container vanilla yogurt
2 ripe bananas
1/2 cup orange juice

  1. In a blender combine all ingredients; blend until smooth.  Stop occasionally to scrape down sides.
  2. Serve immediately.  Store leftovers covered in refrigerator.

                                                                                                                          Makes 4 cups

Banana Smoothie Pops: Spoon banana mixture into 8 (5-ounce) paper cups.  Freeze 30 minutes.  Insert wooden craft sticks into the center of each cup; freeze until firm.  Makes 8 pops.

Fruit Smoothies: Substitute 1 cup of your favorite fruit and 1/2 cup any fruit juice for bananas and orange juice.

Peanut Butter & Jelly Shakes

1 1/2 cups vanilla ice cream or frozen yogurt
1/4 cup milk
2 tablespoons creamy peanut butter
2 graham crackers, coarsely chopped
1/4 cup strawberry preserves (I like fruit only no sugar added) or 1/4 cup fresh fruit

  1. Place ice cream, milk ad peanut butter in blender. Blend on medium speed 1 to 2 minutes or until smooth and well blended.  Add chopped graham crackers and blend 10 seconds on low speed.  Pour into 2 serving glasses.
  2. Place preserves and 1 to 2 teaspoons water in small bowl; stir until smooth.  Stir 2 tablespoons preserve mixture into each shake.  Serve immediately.

Make it fun:  For a change try different types of fruits/preserves.

Note:  you can add a small amount of flax seed meal to any of these recipes for omega 3. Also you can add pureed carrots.

Serve all of these smoothies in a nice glass and a fun straw.  Presentation is everything!
