Menu Plan Monday plus Recipes!

I wanted to share the recipes for some of the meals I made last week–so here they are. All of them are quick, easy and most important cheap! You can always add your own flare and substitute ground turkey or chicken for the beef and whatever else.

Chili Mac

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can tomatoes (I used fire roasted diced tomatoes)
  • macaroni noodles

Brown ground beef and onions until meat is cooked and onions until meat is cooked and onions are tender. Stir in tomatoes and macaroni; cover and simmer until macaroni is tender, about 10 minutes. Season to taste.


Easy Clam Chowder

  • 2 large potatoes, peeled and diced
  • 2 stalks of celery, diced
  • 1/4 c. butter
  • 2 T. flour
  • 1 c. milk
  • 1 can of diced clams, drained

Cook potatoes and celery in salted boiling water until tender, about 8-10 minutes. Drain and mash. In separate saucepan, melt butter; stir in flour. Add milk gradually, stirring constantly, until thickened. Stir in mashed potatoes and celery and clams; heat through.


Easiest Ever Pizza

  • 1 c. flour
  • 1t. salt
  • 1/8 t. pepper
  • 2 eggs, beaten
  • 2/3 c. milk
  • 1 lb ground beef
  • 4 oz. diced mushrooms
  • 1 8 oz. can tomato sauce
  • 2 c. grated cheese
  • 1/2 t. oregano

In large mizing bowl, combine flour, salt, pepper, eggs, and milk; beat until smooth and pour into a large pie plate or pizza pan. Make sure batter covers the bottom of the pan. Brown ground beef; drain well and sprinkle over crust batter. Sprinkle on mushrooms, pour on tomato sauce, and sprinkle cheese and oregano over the pizza. Bake at 425 degrees F for 20-25 minutes or until bubbling and cheese melted.

This was so easy! I used my skillet because I didn’t have a big enough pie plate. I think it would be good to grease your pan with a little butter or cooking spray before you add the batter. Other than that this was a tasty and easy recipe.

  • Homemade chicken noodle soup

  • Spaghetti and meatballs with zucchini
  • Mushroom Soup Casserole
  • Chicken Sandwiches with a side of broccoli
  • Macaroni and cheese with leftover chicken
  • Chili cheese dogs and baked french fries

Reneca’s Menu Plan/ Wheat bread recipe

I’m on top of my planning this week. On Sunday the girls and I made two loafs of honey whole wheat bread and a dozen wheat tortillas for the week (the house smelt wonderful!).  I have just about everything for my menu on hand, so I’ll just have to grab some fresh fruit and milk later at some point.  Here Is what the Ruff family will be enjoying this week.  At the end there is the recipe for the homemade bread!



M: Baked eggs with Yogurt and granola
T:Apple pancakes
W: Cream of wheat, Fruit
TH:Asparagus and cheese omelet
F: Oatmeal Porridge with apples (goes great with the story Kaleah is learning to read)
Berry crepes with yogurt
SU: Strawberry, banana french toast


M:  Flower shaped turkey sandwiches with grapes and carrot sticks
T:   Make your own biscuit veggie pizzas
W:  Bean burritos with tomato, orange salsa
Th:  Buttered vegetable bow ties and broccoli

F:   Sunflower seed butter and jelly sandwiches with corn and peas
S:   Turkey roll ups
SU:Waldorf salad pockets


M:  Savory crepes (eggs, broccoli and cheese)
T:   Lentil casserole
W:  Veggie fried rice with pot stickers
TH: L.O. buffet
F:   Fondue night
S:   Baked chicken with sweet potatoes and grilled asparagus
SU: Homemade chicken and veggie soup

Special Treats:  Healthy Oatmeal Cookies and Chocolate Fondue!!!


Honey Whole Wheat Bread1 C. Warm water
1 tbsp  milk
2 tbsp  olive oil
2 tbsp  honey
2 tbsp  brown sugar   (if you don’t have any on hand its just a cup of sugar and a tbsp of molasses)
1 tsp    salt
1 1/2 c  unbleached all purpose flour
1 1/2 c whole wheat flour
2 tsp   rapid rise yeast (or one packet)
Combine the first 6 ingredients. Add yeast and flour, Kneed until smooth and elastic (10-15 minutes).  Place in a greased bowl and let rise for one hour in the oven with a pan of boiling water (keeps the oven warm plus the added moister helps the yeast).  Punch down (this doesn’t mean you literally punch the dough with your fist.  Use your knuckles to push the air out of the dough).  Shape into a loaf or ball which ever you prefer, cover and let rise for 30 minutes.  Pre-heat oven to 350 degrees.  Bake for 30-35 minutes.  (If crust begins to brown early place a piece of foil on top).
